has just been transferred into kegs.
This year we have only put one bourbon barrel of Aphotic
away for aging, the rest of the batch is being released now.

Old and In The Way Barley Wine
IT'S HERE.....................
After several months of barrel aging we have declared Old & In The Way Barley Wine ready for release! We have a fairly limited supply available. In total, 236 cases of 22 oz bombers were produced, as well as a limited supply of 1/6 BBL kegs. Look for the bottles at your local craft beer supplier. The draft version will be making special appearances over the next few months. Two batches were brewed and both were barrel aged in 12Yr Heaven Hill Bourbon Barrels. The first batch was a more traditional English Style while the second batch leaned a little more toward the US style. In the end however they were both blended together to produce something a little more High Water style. We hope you enjoy our third new release of the year, 2012 is going to be a fun one!

New Releases!!
The wait is over!!! We have officially released the two newest High Water Brewing seasonal releases and I am very proud of the final product. The first is the Aphotic Barrel Aged Baltic Porter. I brewed this batch in September 2011 at Devils Canyon Brewing, after fermentation 1/3 of the beer was racked into 18 year old Elijah Craig Bourbon barrels, another 1/3 was racked into Gallo premium Brandy barrels and the remaining 1/3 of the beer was stored in stainless tanks. We then blended the batch back into a single tank and bottled and kegged the finished product. This is probably the darkest beer I have ever brewed thus earning the namesake Aphotic. Aphotic [ā-fō’-tic] Greek: without light. Formally defined as the depths in water beyond which less than one percent of sunlight penetrates. We have had a tremendous rush on this beer and have essentially had to allocate one 5 gal keg per account. There was a total of 205 cases also produced and they are also selling quickly. I hope you can get to try it and have a short but safe trip to the dark side......
Our second new release is called Blind Spot and is also a dark seasonal beer. The first direction the recipe was taking was to produce an English style Old Ale. But with a Barley Wine already in the cellar aging, I decided to pursue a winter warmer with a slight spice addition. The beer is a dark Mahogany color with tinges of amber. The addition of dried ginger, cardamon, grain of paradise and star anise during the whirpool give this beer an amazing nose and wonderful flavor. I am not a big fan of spiced ales so I was somewhat judicious in the amount of spices I added and I hope you enjoy this beer as much as I do. This beer was also brewed at Devil's Canyon Brewing. The beer finished out at 8.2% ABV.
